Some easy meal prep ideas to make your life easier throughout the week ✨ this week’s round up is actually dairy free and plant based, but still loaded with protein and healthy fats & carbs!

Roasted veggies with couscous
– 3 bell peppers
– 1/2 red onion
– 2-3 large zucchini
– 1 tbsp olive oil
– 1 tsp onion powder
– 1 tsp garlic powder
– salt + pepper
– 1/2 bag Trader Joes harvest blend couscous
Roast at 375°F for around 40-45 min! Just mix it halfway and keep an eye on it. Mix with the cooked couscous.

Mediterranean salad:
– 1-2 English cucumber
– 1 can fire roasted red pepper
– 2 cans hearts of palm or roasted artichoke
– 1/2 pint mini heirloom tomatoes
– 1/4 cup olive oil
– 1 tbsp white vinegar
– greek seasoning I used: dried basil / oregano / rosemary / thyme / mint, you can use one or any combination of these
– fresh parsley
– salt

Chia pudding:
– 1 can full fat coconut milk
– 1/2 – 2/3 cup water
– 1/2 cup chia seeds
Chill in the fridge for atleast 6 hours before consuming.
Topping ideas: fresh fruit, granola, goji berries, pumpkin seeds, hemp seeds, bee pollen, nut butter
