•Excellent fiber for the elimination of excess estrogen (which a lot of women deal with in this estrogen dominant society).
•Contain enzymes that aid in digestion.
•Antioxidants with anti-inflammatory effects.
•Vitamin E content helps prevent oxidative stress.

And oh my goodness, carrots are so cheap. 😂

My favorite way to eat carrots is by making carrot salads. 🥗

And no it’s not like a regular salad with lettuce and croutons, all this salad contains is a mixture of carrot peels, coconut oil, apple cider vinegar and sea salt!

To make your own carrot salad: 🥕
Combine ½ cup of fermented carrot peel strips with 1 TBS of melted coconut oil, 1 TBS ACV, and a sprinkle of mineral salt. You can adjust the proportions of all ingredients to suit your tastebuds.
