Next, heat some oil in a pan. Once hot, add mustard seeds and let them splutter. Then, toss in some curry leaves and sauté until fragrant. Now, add chopped avarakkai to the pan, and stir-fry until they soften, about 5 to 7 minutes.

Now, it’s time to add the ground lentil mixture to the avarakkai. Mix it well and cook for another 10 minutes on low heat. Make sure to stir occasionally to avoid sticking. The aroma will be irresistible!

And there you have it! Avarakkai Parupu Usili is ready to be served. It’s a perfect side dish to complement your rice or roti.
