Ingredients:
* 2.75 lbs raw chicken breast
* 210 g canned chipotle peppers (diced)
* 28 g Kraft fat-free mozzarella
* 113 g low-fat cottage cheese
* 4 slices turkey bacon (cooked and chopped)
* 1/2 cup enchilada sauce
* 12 low-carb tortillas
* 1 tsp paprika
* 1 tsp garlic salt
* 1/2 tsp black pepper

Instructions:
1. Season raw chicken breast with paprika, garlic salt, and black pepper. Bake at 375°F for 30-40 minutes, then shred.
2. Blend cottage cheese, chipotle peppers, and enchilada sauce until smooth.
3. In a bowl, mix the shredded chicken, chopped turkey bacon, and mozzarella.
4. Pour the blended sauce over the mixture and stir until evenly coated.
5. Spoon the filling into each tortilla and roll them up tightly.
6. Place on a baking sheet, seam-side down, and bake at 400°F for 10-15 minutes or until crispy.
