Healthy Almond Flour Banana Bread
3 lg ripe bananas, mashed
3 lg eggs
1/4 cup unsalted butter, melted
1/4 cup honey
1- 2 tsps vanilla
1/2 tsp almond flavoring
2 1/2 cups almond flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/3 tsp nutmeg, freshly grated
1/2 tsp salt
1/2 cup chopped walnuts
1/2 cups raisins
Tips
1. Use extra ripe bananas for optimal sweetness.
2. Soak raisins in rum and wine water at least overnight.
3. Toast walnuts for roughly one minute to bring out the flavor.
4. Butter can be substituted with coconut oil.
5. You can store at room temperature for up to 3 days. Place in the fridge afterwards.
Instructions
1. Preheat oven at 350F (175 C).
2. Measure and sift together dry ingredients- flour, baking soda, baking powder, salt, cinnamon and nutmeg. Mix with a wisk to distribute everything evenly.
3. In a large bowl mash ripe bananas and wisk in eggs, butter, vanilla, almond flavoring and honey.
4. Gradually add dry ingredients to wet, stirring until just combined. Do not overmix. Fold in raisins and walnuts.
5. Pour batter in a prepared 8 x 4 loaf tin and bake for 1 hr 10 mins or until a toothpick comes out clean. Batter may appear raw because of the almond flour, but do not overbake. If the top browns too quickly cover loosely with foil after 30 minutes.
6. Cool in the pan for 15 minutes before transferring to a wire rack.
7. Slice and enjoy!
