Healthy lunch or dinner idea 🌱

✨Recipe for 2 portions, 600 calories each✨

Ingredients:
• Tuna stuffed courgette:
– 1 courgette
– 2 tsp olive oil
– small onion
– can of tuna
– 30g cheddar cheese
– salt, pepper, parsley & tbsp tomato paste

• Mussels
– 1kg live mussels
– 75ml white wine
– small onion
– 1 tsp olive oil

METHOD:

Preheat oven 180C fan. Cut the courgette in half, add some oil and salt and bake for 20 minutes. In the meantime add oil to a pan and the onion cut in little cubes and let them soften. Then add the can of tuna (drained), salt, pepper, parsley and tomato paste and stir until everything is mixed.

After 20 minutes, “empty” the courgettes and add the courgette meat into the tuna mixture. Mix together and fill the courgettes halves. Put some cheese on top to take the dish to the next level!

While it cooks add some oil and onion to a deep pan, add the mussel and the wine. Put the heat on high and cover, once it’s steaming let cook for 8 to 10 minutes or until all the mussels have opened. ⚠️ Do not eat the mussels that opened very little or nothing at all.

Serve the mussels with some lemon and enjoy this mediterranean, healthy and delicious meal!
