Asian Beef & Mushroom Spaghetti

o Equipment: a large nonstick pan (5 qrt.), a pasta pot, a ground meat chopper (OPT)
Ingredients:
• 12 oz (340g) dry thin spaghetti
• 1 ½ TBS (22ml) vegetable/Canola oil
• 1 lb (454g) ground beef (80%/90% fat)
• 1 lb (454g) Baby Bella mushrooms, thinly sliced
• 1 medium yellow onion, diced
• 3 garlic cloves, minced
• 3 green onions, diced
• 1 ½ cup (225g) frozen peas (or peas + carrots)
+ For the sauce:
• 2 ¼ cups (532ml) chicken broth
• 3 TBS (23g) cornstarch
• 2 TBS (26g) brown sugar
• 3 TBS (45ml) oyster sauce
• 1 ¾ TBS (30ml) soy sauce
• 2 tsp (10ml) toasted sesame oil
• ¼ tsp (0.6g) ground pepper
Instructions:
1. Start with boiling a pot of water with about 1 TBS (15-18g) of salt. Cook according to the package’s instruction (typically 10 minutes after boiling). Meanwhile, start cooking the rest.
2. Prep all the produce (mushrooms, yellow onion, garlic, green onion).
3. Preheat a large nonstick pan with oil over medium-high heat for 1 minute. Once oil is thin enough, tilt the pan to coat with oil.
4. Add mushrooms, yellow onion; stir occasionally until mushroom is browned.
5. Add beef, and garlic; stir; break to bits and spread the beef out. Let sear undisturbed until the bottom side is slightly browned.
6. Stir all sauce ingredients together until cornstarch dissolved; then pour to the pan. Bring to a soft boil then reduce heat to a simmer. Simmer for 2 minutes.
7. Add frozen peas, stir occasionally until the sauce reaches desired thickness (stick to the spoon).
8. Add cooked pasta to the pan along with diced green onion (save some for garnishing later). Toss/mix (with a pair of tongs) until thoroughly coated with the sauce. Remove from heat.
9. Serve warm. Sprinkle with some diced green onion and ground pepper (and or red pepper flakes) if desired. Enjoy!
