Ingredients:
Pumpkin (Cubed, Skin Removed): 2 cups
Mustard Seeds: 1 tsp
Urad Dal: 1 tsp
Dry Red Chilies: 2, broken
Green Chilies: 1, chopped (optional)
Curry Leaves: 1 sprig
Turmeric Powder: ¼ tsp
Salt: To taste
Grated Coconut: 2 tbsp
Oil: 1 tbsp
Asafoetida (Hing): A pinch
Water: ¼ cup
Instructions:
1️⃣ Heat oil in a pan and add mustard seeds. Let them splutter.
2️⃣ Add urad dal, dry red chilies, green chilies, curry leaves, and asafoetida. Sauté for a few seconds.
3️⃣ Toss in the chopped pumpkin and mix well.
4️⃣ Add turmeric powder, salt, and ¼ cup water. Cover and cook on low heat until the pumpkin turns soft.
5️⃣ Once the water evaporates, add grated coconut and mix well.
6️⃣ Stir-fry for another 2 minutes, turn off the flame, and serve hot with rice!
Serving Suggestion:
Best served with sambar, rasam, or curd rice for a traditional South Indian meal.
Can also be paired with chapati for a light dinner.
