Give this salad a whirl when you’re feeling like something extra crunchy. It makes a ton, so you can of course divide the recipe in half. I just love making big batches of things to save me time in the kitchen the next few days.
1 medium head cabbage, finely sliced
1 bunch Dino kale, stems removed and finely sliced
1/2 large white or yellow onion, finely sliced
Optional, 1 fennel bulb, thinly sliced
Dressing:
1 cup @go_raw organic pumpkin seeds with sea salt
2-3 garlic cloves
3 TBSP @mina capers
1-1 1/2 lemons depending on juiciness
Small Squeeze of @thedatelady date paste or 1/2-1 medjool date for the slightest bit of sweetness
1 1/3 cup water*
* if subbing cashews I’ll do 1 1/2 cups water, good pinch of sea salt, and 1/4” raw ginger sometimes
Mix together and tong endlessly until it’s well dressed. 😊
