TURKEY & SWEET POTATO CHILI 🍠🫘
I love chili because it is so filling & satiating with tons of fiber & protein! I also love it for a meal prep because it’s a whole balanced meal in one bowl that takes 45 seconds to warm up. Here is my go to recipe, this time made with turkey, sweet potatoes, carrots, zucchini & beans! Remember – you can always switch up the meat & veggies to use whatever you have!
🍠🫘🥕🥒Turkey & Sweet Potato Chili
2 tsp avocado oil
1 yellow onion, chopped
3 garlic cloves, minced
1 large sweet potato, chopped into small chunks
1 large carrot, chopped
1 zucchini, chopped
1 pound ground turkey
2 tsp chili powder
1 packet of taco seasoning
1 tsp cumin
1 tsp dried oregano
Salt & pepper to taste
28 oz can diced or crushed
tomatoes (tomato sauce works too)
1 C chicken bone broth (more if needed)
15 oz can black beans, rinsed & drained
15 oz can red kidney beans, rinsed & drained
Optional toppings:
Cheese
Plain greek yogurt
Avocado
Heat oil in a large pot. Add the sweet potato first and cover to steam, stirring occasionally. After a couple of minutes, add in the onion and carrot. Saute until onion is translucent. Add garlic and zucchini and continue to saute. Once zucchini is just fork tender, either remove veggies and brown the turkey, or add the turkey in with the vegetables if the pot is big enough. Cook until turkey is cooked through. Next add in spices and stir for ~30 seconds or until fragrant. Add in the rest of the ingredients and bring to a boil. Lower heat & simmer for 10-30 minutes or until it is thickened to your liking. Season with salt & pepper as needed. Serve with cheese, plain greek yogurt and avocado if desired. Enjoy!
