1. Broccoli & Cauliflower Soup
INGREDIENTS:
1 large head of broccoli
1 small head of cauliflower
4 tsp vegetable bouillon powder
METHOD:
Break broccoli and cauliflower into florets and put in a large saucepan
Add 1 litre of water and the vegetable bouillon powder | Bring to the boil
Boil for 10 minutes or until tender
Season well with salt and pepper
Blend until smooth
2. Spiced Carrot & Lentil Soup
INGREDIENTS:
3 carrots, grated
1 cup red lentils, rinsed in water
1 tbsp olive oil
1 tbsp cumin seeds
1 tsp chilli flakes
4 tsp vegetable bouillon powder
METHOD:
Add cumin seeds to large saucepan and heat until until fragrant
Add oil, carrots, lentils and chilli flakes and stir well
Add 1 litre of water and vegetable bouillon powder | Bring to the boil
Simmer for 15 minutes until lentils are tender
Season well with salt and pepper
Blend until smooth
3. Leek & Potato Soup
INGREDIENTS:
2 large leeks, washed thoroughly and sliced
2 large potatoes, scrubbed and cut into 6-8 even sized pieces
4 tsp vegetable bouillon powder
1 tbsp olive oil
METHOD:
Heat 1 tbsp oil and add leeks | Cook leeks on low heat for 3 minutes to soften
Add 1 litre of water and 4 tsp vegetable bouillon powder
Add potatoes and bring to the boil
Boil on medium heat for 15 minutes until potatoes and leeks are tender
Season well with salt and pepper
Blend until smooth
