Healthy apple crumble loaf recipe 🍂✨🍎
Topping
1/4 cup almond flour
1/4 cup @bobsredmill 1:1 GF flour
2 tbsp coconut oil, melted
2 tbsp granulated monk fruit
1 tbsp cinnamon
Loaf
2 large eggs (can try flax eggs but no guarantee 🥲)
1/4 cup granulated monkfruit sweetener
1/4 cup sugar free syrup
1/4 cup unsweetened apple sauce
2 tsp apple cider vinegar
1 tsp vanilla
3 small apples, grated and drained
1/2 cup 1:1 GF flour
2 cups almond flour
2 tbsp cinnamon (or more🫶)
2 tsp baking powder
1 tsp baking soda
Pinch salt
Preheat oven to 350
Make topping and set aside
Mix wet ingredients. Mix dry ingredients separately. Then fold wet into dry until combined.
Press into parchment-lined loaf pan. Press topping on
Bake 30-35 mins or until toothpick in centre comes out clean.
Serve as is or top with coconut whip or vanilla greek yogurt!
I also will mix protein powder with yogurt for a higher protein topping 🥰🫶🍂
