Salad Bowl “Soul Bowl”

4 (600 g) chicken breast fillets
2 chioggia beets, peeled and chopped
4 onions, peeled
200 g red cabbage
200 g green asparagus
1 lime
salt, pepper and olive oil
400 g red quinoa, cooked
200 g cooked black beans
2 avocados, peeled and chopped
200 g feta cheese
200 g salad
100 g walnuts
50 g fresh coriander, fine chopped
1 red chili pepper, fine chopped
4 fried eggs
hummus

Pre-heat the oven to 150°C. Put chicken, chioggia beets, onions, red cabbage and asparagus on an oven plate, squeeze over lime, olive oil, salt and pepper. Bake for 20 minutes, or until the chicken reach an inner temperature of 71°C. Put everything into four bowls and add quinoa, black beans, avocado, salad, feta cheese, coriander, chili and walnuts. Turn it gently. Serve with fried egg and hummus.

Serve with fried halloumi instead of chicken if you want to have a meat-free day!
