Broccoli Bread
Makes 1 small loaf
– 2 large heads of broccoli
– 5 eggs
– 1 1/2 cup of flour
– 2 tablespoons of baking powder
– 1 teaspoon of salt
– pepper
– 1 heaping tablespoon of melted butter
Preheat the oven to 225°F and line a loaf/bread pan with baking paper. Coarsely chop the broccoli, place in food processor and blend until you have got a fine rice-like texture. Pour all of it in a mixing bowl. Add all other ingredients and mix well. It should be loose and wet. Transfer to the loaf/bread pan. Bake on the middle rack in the oven for 30-40 minutes or until slightly golden and firm. Remove from the oven and let cool completely. Pull it out by grasping the baking paper or turn it upside-down and carefully remove the baking paper. Slice into bread-sized slices and store in the fridge. Should last a week or so.
