🍞 Eggless Semolina Milk Bread

Ingredients:
• 1 cup semolina (fine rava/sooji)
• 1 cup warm milk (adjust slightly if needed)
• 2 tbsp sugar (optional, for a slightly sweet bread)
• 1 tbsp oil or melted butter
• 1 tsp instant yeast (or 1.25 tsp active dry yeast)
• 1/4 tsp salt

Optional (for flavor):
• 1/2 tsp cardamom powder (for a slightly sweet, aromatic touch)
• 1 tbsp milk powder (for richness)

Instructions:
1. Activate yeast (if using active dry yeast):
• Mix the yeast, warm milk (not hot), and sugar in a bowl. Let it sit for 5–10 minutes until frothy.
• Skip this step if using instant yeast.
2. Mix dough:
• In a mixing bowl, combine semolina, salt, and optional cardamom/milk powder.
• Add the milk mixture (with yeast), oil or butter, and mix well.
• Let the mixture rest for 10–15 minutes — this helps the semolina absorb the liquid and soften.
3. Knead:
• After resting, knead the dough for 5–7 minutes until it’s soft and pliable. Add a bit more milk if it feels too dry.
• The dough will be slightly sticky but manageable.
4. First rise:
• Cover and let it rise in a warm place for about 1–1.5 hours, or until doubled in size.
5. Shape & second rise:
• Punch down the dough, shape it into a loaf or buns, and place in a greased loaf pan or baking tray.
• Cover and let it rise again for 30–45 minutes.
6. Bake:
• Preheat your oven to 180°C (350°F).
• Bake for 25–30 minutes or until the top is golden and a toothpick comes out clean.
