High Protein Cottage Cheese Pancakes
1/2 cup of Cottage Cheese blended
3/4 cup Oat Flour
2 eggs
1/3 cup of Water or Milk
1/2 tsp Baking Powder
1 tsp Vanilla
2 tsp Sweetener of Choice (Maple Syrup, Honey, Sugar, etc.)
Oil or Butter for cooking
Instructions:
Blend Cottage cheese with Water (or Milk).
Wisk eggs, add Vanilla, Sweetener, and Cottage Cheese Mixture.
Mix dry ingredients together. Add egg mixture to the dry ingredients.
Heat a little oil or butter in a non stick frying pan over medium heat, and add a few tablespoons of batter to the pan. Cook pancakes for 2-3 minutes until bubbles come to surface, and the top looks set. Flip and cook for another 1-2 minutes.
