Today, we’re making a delicious and nutritious Poha Mix Veg Adai! This Indian pancake is packed with flavor and goodness, perfect for breakfast or a snack.

Start by soaking one cup of poha, or flattened rice, in water for about ten minutes. Once it’s soft, drain the excess water and set it aside.

In a mixing bowl, combine the soaked poha with one cup of rice flour, half a cup of chopped vegetables like carrots, peas, and spinach, and a tablespoon of chopped coriander.

Now, add spices! Mix in half a teaspoon of cumin seeds, a pinch of turmeric, and salt to taste. For some heat, you can add chopped green chilies.

Next, add water gradually to form a smooth batter. The consistency should be pourable yet thick enough to hold its shape.

Heat a non-stick pan and drizzle a little oil. Pour a ladleful of the batter onto the pan, spreading it into a circle. Cook until the edges turn golden brown, then flip and cook the other side.

Repeat this process until all the batter is used. Serve your Poha Mix Veg Adai hot with chutney or yogurt on the side for an extra burst of flavor.
