SWEETCORN TOSTADA
Turning leftover parathas into something absolutely delicious! 😍 These crispy, tangy, and spicy Sweetcorn Tostadas are so easy to make with a vibrant sweetcorn salsa, creamy avocado, and cheese. Sweetcorn and avocado are nutritional powerhouses too! No cooking required for the toppings – just pure flavor!

Sweetcorn is excellent for eyes, bones and overall immunity; whereas Avocados contain an impressive amount of nutrients and are especially rich in fiber, B6, vitamin C, potassium, vitamin E, folate, and copper.

Here’s the Recipe –

Making Sweetcorn Salsa
– Charred one sweetcorn on an open flame and remove the kernels.
– Into that add finely chopped onion, bell peppers, tomatoes, coriander and some pomegranate.
– Next add 1 tsp red chili powder, some salt per taste and squeeze in lime juice.
– Mix everything well and keep the corn salsa aside.

Preparing Avocado Spread
– Now mash one avocado.
– Into that add some salt and fresh lime juice.
– Mix and keep aside.

Roasting Crispy Tostada Base
– To make tostada base, take mini paratha & grill or roast on tawa; till it becomes golden and crispy.
– For oven, grill 190 degree 10-12 minute each side in a pre-heated oven.

Serving Toastada
– Take crispy base, apply some mash avocado.
– On top of that place some sweetcorn salsa, and shred some cheese on top.
