This Chickpea Cauliflower wrap is ready in Just 30 minutes, vegetarian, packed with 23gms of protein and 12.5gms of fiber. Perfect for work, travel or meal-prep.
Ingredients/ Zutaten :
1. Kichererbsen (Füllmenge 200G und Abtropfgewicht 130g)
2. 1/4 Kopf eines mittelgroßen Blumenkohls
3. 2 EL Olivenöl
4. Süß und scharf Paprika pulver
5. Thymian
6. Salz und Pfeffer
7. 2,5 gehäufte Esslöffel griechischer Joghurt
8. Ein Teelöffel Zitronensaft
9. Geriebene oder gehackte Knoblauchzehe
10. 1 Mehrkorn oder Vollkorn Wrap
11. 2 Esslöffel zerbröckelter Feta-Käse
12. Frische Petersilie
13. 1 Esslöffel Hanfsamen
Method:
Step 1 – ROAST CHICKPEAS AND CAULIFLOWER:
🥣 Rinse a can of cooked chickpeas well.
🥦 Chop 1/4 of a cauliflower into small florets
🫒Drizzle with olive oil, paprika, salt, pepper, and thyme. Toss well
🔥Roast at 210°C for 25 minutes. Crispy, golden, and packed with flavor.
Step 2 – PREPARE THE SAUCE :
🥄 2. 5 heaping tablespoons of Greek yogurt, lime juice, salt, and grated garlic.
🌾 Step 3 – Warm up a Mehrkorn or Vollkorn wrap
Step 4 – ASSEMBLE THE WRAP:
🌯 Spread your yogurt base, top with roasted chickpeas and cauliflower, crumbled feta, fresh parsley… and customize however you like!
🌱 Add a tablespoon of hemp seeds for that final kick of protein, omega-3s and fiber. Optional, but powerful.
