Ingredients:
1.2KG Boneless & Skinless Chicken Breast (butterfly & slice into 8 strips)
1 Tsp Salt, 1 Tsp Hot Paprika, 1 Tsp Onion & Garlic Powder, 1/2 Tsp Chilli Powder, 1/2 Tsp Cayenne Pepper, 1/2 Tsp Oregano
200g Plain All Purpose Flour (not all of this gets used – approximately 10g – 20g sticks to the chicken per tender)
135g Potato Starch (not all of this gets used – approximately 5g – 10g sticks to chicken per tender)
Flour Seasonings (same seasonings used above)
1 Cup Soda Water/Sparkling Water
85ml Buffalo Sauce (Franks Redhot Buffalo Sauce)
40g Honey
IMPORTANT NOTES:
While air frying, make sure to check the chicken every few minutes. If you notice any dry or patchy white flour spots on the surface, give those areas another light spray of cooking oil.
This step is crucial for achieving that golden, crispy coating especially when using a flour based crust. If you skip this the coating can end up looking dry or uneven instead of crunchy and golden like traditional fried chicken.
