Sprouts Salad

(Serves 2)
Ingredients

1. Couscous 1/2 cup

2. Water 1/2 cup

3. Boiled corn 1/4 cup

4. Carrrot (chopped) 1/4 cup

5. Red bell pepper (chopped) 1/4

Cup

Green capsicum (chopped)1/4 cup

7. Sprouts (boiled) 1 cup

8. Roasted Peanuts (for garnish)

For dressing*

1. Raw mango medium 1/2

2. Ginger 1 inch

3. Garlic 1julienne

4. Dried red chilli 2 small

5. Mustard paste/kasundi 1 and half

tbsp

6. Honey 1 and 1/2 tbsp

7. Olive oil 3 tbsp

8. Salt to taste

9. Chopped parsley/coriander 1 tbsp

Method _

1. Take 1/2 cup of wash couscous in a

bowl and add 1/2 cup of boiling

water to it. Cover and let it rest for

10 mins.

2. To prepare the mustard dressing

add all the ingredients given in the

salad dressing list to a blender jar

and prepare a smooth pourable

paste.

3. In another deep bowl pour in half

the quantity of dressing.

4. Top it with boiled sprouts, cooked

couscous, chopped veggies, roasted

peanuts and some chopped

coriander and cover it with a lid.

5. Keep it as is if you are planning to

pack for lunch and shake well before

consuming.

6. Else give it a nice shake and mix.

7. Serve and enjoy.
