High-Protein Lemon Yogurt Mousse
Ingredients:
2 cups non-fat plain Greek yogurt
4 large egg whites (whipped to stiff peaks for volume)
1 scoop (30g) vanilla whey or plant-based protein powder
2 tbsp fresh lemon juice
1 Tsp of Vanilla Extract
Zest of 1 lemon (for flavor boost)
2 tbsp erythritol (or another zero-calorie sweetener like stevia; adjust to taste)
1 packet (about 7g) unflavored gelatin
1/4 cup water (for dissolving gelatin)
Optional garnish: A few lemon slices or fresh mint leaves

Instructions:
Prepare the gelatin: In a small bowl, sprinkle the gelatin over 1/4 cup cold water. Let it sit for 5 minutes to bloom, then microwave for 10-15 seconds (or heat gently on the stove) until fully dissolved. Set aside to cool slightly.
Whip the egg whites: In a clean bowl, beat the egg whites with an electric mixer until stiff peaks form (about 3-5 minutes). This adds air and keeps the mousse light and low-calorie.
Mix the base: In a large bowl, combine the Greek yogurt, protein powder, lemon juice, lemon zest, and erythritol. Stir until smooth. Gradually mix in the cooled gelatin.
Fold in the whites: Gently fold the whipped egg whites into the yogurt mixture in batches, being careful not to deflate them. This creates the fluffy mousse texture.
Chill and set: Divide into 4 ramekins or glasses. Refrigerate for at least 2 hours (or up to overnight) until set.
Serve: Garnish if desired and enjoy cold!
