Caramelized Peach & Nut Toast
with cottage cheese, basil & a maple drizzle
You’ll need:
1 slice of sourdough (or bread of your preference)
A little olive oil (for the bread)
1 ripe peach, sliced
1 tsp avocado oil (or whatever oil you have)
A small handful of nuts (peanuts, walnuts, pistachios — whatever you like)
Cottage cheese (use a good amount so you get that protein!)
Fresh basil
Chili flakes
Salt
A drizzle of low-sugar maple syrup
Let’s make it:
1. Toast the bread
2. Brush a bit of olive oil on your sourdough and toast it in a pan or the toaster until golden and crispy.
3. Cook the peaches + toast the nuts
4. In a pan with a little oil, add the peach slices and let them get soft and caramelized (takes about 3–5 mins).
5. On the same pan or a separate one, toast your nuts for a couple of minutes so they get nice and fragrant.

• Spread a nice thick layer of cottage cheese on the toast (don’t skimp, this is where your protein’s at!).
Add the warm peaches, a few torn basil leaves, and sprinkle on your toasted nuts.
