Healthy brownie:

Prep: Wash & pierce the sweet potato a few times with a fork.
2. Air Fry:
• Temp: 190°C (375°F)
• Time: 30–35 mins (medium sweet potato)
• Flip halfway so it cooks evenly.
3. Check: Stick a knife or fork—if it slides in like butter, it’s ready.
4. Scoop: Cut open, scoop out the flesh, and mash it for your brownies.

Ingredients (makes 4 squares):
• ½ cup mashed sweet potato (about ½ medium sweet potato)
• 1 egg (or 1 flax egg for vegan)
• 2 tbsp cocoa powder (unsweetened)
• 1 tsp vanilla extract
• Pinch of salt
• Optional: 1–2 dates (for extra sweetness, blend them in)

Instructions:
1. Preheat oven to 175°C (350°F).
2. Mash sweet potato until smooth.
3. Whisk in egg, vanilla, (dates if using).
4. Stir in cocoa powder + pinch of salt → thick batter.
5. Spread into a mini baking dish (or even 2 small ramekins).
6. Bake 18–20 mins (edges firm, middle a little soft).
7. Cool 10 mins before cutting into 4 squares (or just eat it hot with a spoon 😅).
