This Vegan Mac & Cheese recipe is simple to make, creamy, tasty, healthy and it the best part is that it’s A LOT healthier than what you get in a box!

The Ingredients:
2 heaping cups of Sweet Potato (boiled)
1 cup of Carrots (boiled)
1/3 cup Olive Oil
1/2 cup Raw Cashews
1/2 cup Almond Milk (unsweetened)
1/2 cup Nutritional Yeast
1 tbsp Lemon Juice (fresh)
1 tsp Himalayan Pink Salt
1/2 tsp Onion Powder
1/2 tsp Garlic Powder

Add all ingredients listed into a high powered blender (I use the Vitamix) and blend until smooth and hot. (About 3 minutes)

After the sauce is done, pour over pasta of choice, I used whole wheat Riccioli pasta and garnish away.

Garnish:
Broccoli (boiled)
Chilli Flakes
Basil
Oregano
Alfalfa Sprouts

TIPS:

TO THINK IS TO CREATE

• If your sauce is too thick, add more almond milk
• Prepare your pasta before making the sauce
• Garnish GAME….once again, options are endless! Get creative!
