* ghee
* almonds
* cashews
* walnuts
* pistachios
* pumpkin seeds
* sunflower seeds
* flaxseeds
* sesame seeds
* watermelon seeds
* rolled oats
* seedless dates (soft)
Step-by-Step Recipe:
1. Roast the Nuts:
* Heat 1 tablespoon ghee in a pan.
* Add almonds, cashews, and walnuts. Roast on medium heat until golden and aromatic. Set aside.
2. Roast the Seeds & Oats:
* In the same pan, add pistachios, pumpkin seeds, sunflower seeds, flaxseeds, sesame seeds, watermelon seeds, and rolled oats.
* Dry roast them on low to medium heat until they start to pop and release aroma. Set aside to cool.
3. Grind the Mix:
* Once all the nuts, seeds, and oats have cooled down, coarsely grind them in a mixer or food processor. Do not make a fine powder; keep it slightly chunky for texture.
4. Prepare the Date Paste:
* In the same pan, add 1 teaspoon ghee and roast the seedless dates for 2–3 minutes until soft.
* Transfer to a mixer and blend into a thick paste.
5. Mix & Shape:
* In a large mixing bowl, combine the date paste and the ground nut and seed mixture.
* Mix everything thoroughly with your hands or a spatula until well combined.
6. Form Laddoos:
* Take small portions of the mixture and roll them into round balls (laddoo shape) using your palms.
* If the mixture feels dry, add a tiny bit more ghee to help bind.
7. Serve or Store:
* Your healthy energy laddoos are ready!
