Bake soft and healthy gluten-free bread at home with the goodness of jowar (sorghum) and bajra (pearl millet) πΎ.
This bread is completely wheat-free, maida-free, and vegan β perfect for those on a gluten-free diet or anyone who wants a wholesome alternative to regular bread.
Unlike typical gluten-free breads, this recipe uses psyllium husk and flaxseed for natural binding, making it soft, sliceable, and almost like whole wheat bread πβ¨.

Recipe (1 medium loaf β ~650β700 g dough)
Ingredients:
Jowar (sorghum) flour β 150 g (1 cup)
Bajra (pearl millet) flour β 100 g (ΒΎ cup)
Arrowroot powder β 75 g (Β½ cup)
Flaxseed powder β 20 g (2 tbsp)
Psyllium husk β 15 g (1 Β½ tbsp)
Jaggery powder β 20 g (1 Β½ tbsp)
Salt β 3 g (1/2 tsp)
Instant yeast β 6 g (2 tsp)
Olive oil β 45 ml (3 tbsp)
Warm water β 350 ml (1 Β½ cup approx.)
Instructions:
Make psyllium gel β Mix psyllium husk with 250 ml warm water. Stir and set aside 5 mins until thick gel forms.
Flax mix β Mix flaxseed powder with 50 ml warm water. Let it rest for binding.
Dry mix β In a large bowl, combine jowar flour, bajra flour, arrowroot, jaggery, salt, and yeast.
Combine wet β Add psyllium gel, flax mixture, and olive oil. Slowly add ~50 ml warm water until dough is sticky yet kneadable (like wheat dough).
Knead & First rise β Knead well (like whole wheat bread). Cover and rest 45β60 min until slightly puffy.
Shape β Transfer dough into greased loaf tin, smooth top with wet hands.
Second rise β Rest 30β40 min until lightly risen (not double).
Bake β Preheat oven at 180Β°C. Bake 40β45 min until golden and hollow-sounding.
Cool completely β Rest in tin for 10 min, then cool on wire rack at least 1 hour before slicing.
Tips:
Toast flaxseed powder for nuttier flavor.
Add 1 extra tbsp olive oil for softer crumb.
Always cool fully before slicing to avoid gummy texture.
