Chicken parm meatloaf! A High protein, family friendly healthy dinner idea!! That is so good for meal prep! Ingredients: * 1tbsp evoo * 1/3 diced yellow onion * 3 cloves minced garlic * 1lb ground chicken * 1/3 cup bread crumbs (I used finely chopped up stale bread) * 1/4 cup parm cheese * 2 light string cheeses * 1 egg * 1 handful fresh parsley * 1 tsp dried oregano * 1/2 tsp salt * 1/2 cup marinara * 2tbsp panko * 1 tbsp melted butter Method: 1. Preheat oven to 400°F 2. Cook onion and garlic in olive oil over medium heat until softened 3. Mix ground chicken, herbs (leaving a little parsley for the topping), half the parm cheese, breadcrumbs, egg, and the cooked garlic and onion in a large bowl just until combined. 4. Place the mixture in a loaf pan and press down into an even layer 5. Top with marinara sauce and bake 40 minutes. 6. Combine panko, the rest of the parmesan cheese, melted butter, and parsley. 7. Top meatloaf with string cheese and bread crumb topping. Bake an additional 15 mins 8. Cool 10 minutes before slicing. Makes 4 servings!
