🥘 Ingredients (for 3–4 servings):
Jeera
1 medium lauki (bottle gourd) – peeled & cut into small cubes
200 g paneer – cut into medium cubes
2 onions – finely chopped
2 tomatoes – pureed or finely chopped
1 tsp Kashmiri red chilli powder (for color & mild heat)
1 tsp chicken masala (adds depth – works great even in veg prep)
½ tsp homemade garam masala
1 tbsp ginger-garlic paste
2 tbsp oil/ghee
Salt to taste
Fresh coriander leaves – chopped
A few drops of lemon juice
👩🏻🍳 Method:
Heat oil/ghee in a kadhai. Add jeera, let it crackle, add onions & sauté until golden brown.
Add ginger-garlic paste, cook until raw smell fades.
Add dry spices leaving the chicken masala and garam masala out for this step
Add lauki and tomato puree (or chopped tomatoes)
Cook until oil begins to release and the lauki is well cooked.
Add chopped paneer. Gently mix to coat them with the masala.
Sprinkle garam masala, chicken masala & simmer for 5–7 mins on low heat.
Turn off the flame. Add drops of lemon juice for tang (optional).
Garnish with fresh coriander.
