Cashew Mayo Recipe
1 cup raw, unsalted cashes, soaked for min 2hrs and rinsed
1/2 cup filtered water
2 tsp Apple Cider Vinegar
2 tsp lemon juice
3/4 tsp sea salt
2-3 cloves of garlic
Blend all ingredient until smooth

Oil Free Basil Pesto
1/2 cup basil (remove stems)
3/4 tbsp sunflower seeds
1-2 garlic cloves
1/2 TBS lemon juice
1 TBS Nutritional Yeast
1/5 tsp sea salt
2 TBSP water
Blend in small food processor or Mortar and Pestle until combined

Vegan Buttermilk
1/2 cup almond milk
1/2 TBS apple cider vinegar
Mix together and let sit for 10 minutes

Salad Dressing
1/4 cup basil pesto (vegan)
1/2 cup vegan mayo
2 TBS shallots
1/2 cup vegan buttermilk
juice of 1 lemon
sprinkle of salt and pepper to taste
blend in a blender until smooth. Should be creamy but not thick.

Salad Recipe
1 whole, ripe avocado diced
1 cup cooked quinoa (GF) or Israeli couscous
1 cup washed, chopped arugula
1/2 cup dried corn (salad toppings isle at Sprouts)
1/2 cup diced roma tomatoes
1/4 cup toasted pepitas
1/4 cup currants (baby raisins)
Lay ingredients in lines in a salad bowl. Add dressing and mix together to serve
