LEFTOVER SUPERFOODS ENERGY BAR
INGREDIENTS:
2 cup pre-roasted gluten-free oats
2 cups leftover seeds nuts berries etc (I used sesame, raisins, cacao nibs, pumpkin seeds, aliv, chia, prasad kurmura from Dhari Devi temple, hemp hearts, pecan nuts, cacao powder phew!!)
LIQUID BASE
½ cup honey/maple syrup/ date syrup
4 tbsp melted coconut oil
1/4 cup peanut butter or any nut butter
1/4 cup Zanutella
¼ tsp pink salt
METHOD:
PREHEAT – the oven to 160 degrees centigrade
MIX- oats + all the super foods in your kitchen
HEAT & WHISK- sweetener, coconut oil, peanut butter, Zanutella and pink salt
POUR – the liquid mix into the granola and mix it well.
SPREAD – the mixture onto the prepared pan an flatten it out. Make knife cuts in the shape you want. I usually bake it for 20-30 min to get in crunchy at this stage
STORE – the leftovers in the refrigerator for up to 2 months.
