Don’t consume Calcium with Iron. Add Non Diary Protein Option with Spinach (Iron). Iron is great when combined with Vitamin C and proteins.
Recipe:
In a pan, add some Vegan butter (Let me know if you want to know the brand) and Canola Oil (This is what I used), add 1/4th Tea Spoon asafoetida (Hing), cumin seeds, 4-5 Black Peppers, 1 small cinnamon stick, 1 Black Cardamom, fresh Ginger, Garlic and Green chilli Paste, Let it cook for about 2 minutes on low to medium flame, (NEVER USE HIGH FLAME), now add chopped Red Onions (I personally used 2 medium size onions) and 3 medium size Tomatoes ( Made a puree) and now after the onions are cooked for 5 minutes (Please see if they are golden/ translucent now) and tomato puree. Add Salt, Red Chilli Powder, Turmeric, Coriander Powder, Garam Masala. **This is the MASALA CURRY
In a different pot, boil the spinach bunch for about 2-3 minutes and then put it in the ice cold water and then grind it to make Spinach Puree.
Now add the Spinach Puree into the Masala Curry** and I personally like to sprinkle 1 table spoon of Shahi Paneer Masala, add some Kasuri Methi Dried, Garnish with some Coconut Milk and Fresh Cilanto/Coriander Leaves.
