**Ingredients:**
Curd 1/2 cup
Roasted besan 2tbsp
Red chilli powder according to taste
Haldi 1/2 tsp
Pav Bhaji masala 1-2 tbsp
Garam masala 1/2 tsp
Kasuri methi 1/2 tsp
Oil
Cumin seeds 1tsp
Ginger garlic paste
Green chilli
Coriander leaves

**Method:**
Step 1: Prepare the Yogurt and Spice Mixture

In a bowl, combine the beaten yogurt with turmeric, red chili powder, pav bhaji masala, and roasted gram flour (besan).
Mix well until there are no lumps. The roasted gram flour helps prevent the yogurt from curdling.

Step 2: Prepare the Paneer

Take homemade paneer and crumble it roughly with your hands. You can also grate it coarsely.

Step 3: Sauté the Aromatics

Heat oil and butter in a pan or kadai.
Add cumin seeds (jeera) and chopped onions. Sauté until the onions are translucent.
Add ginger-garlic paste and green chilies. Continue to cook until the raw smell is gone.

Step 4: Roast the Spices

Add kasoori methi, garam masala, and salt to the pan.
Roast the spices for a few seconds to enhance their flavor.

Step 5: Cook the Tomato Puree

Add the tomato puree to the pan.
Cook the mixture until the tomatoes are well-cooked and the oil starts to separate from the masala.

Step 6: Cook the Yogurt Mixture

Lower the flame to low-to-medium.
Add the prepared yogurt and spice mixture to the pan.
Stir continuously for 1-2 minutes to prevent the yogurt from curdling.

Step 7: Adjust Consistency and Simmer

Add a little water (or milk) to adjust the gravy’s consistency.
Cover the pan and let it cook until the gravy thickens and oil begins to separate.

Step 8: Add the Paneer

Add the crumbled paneer to the gravy.
Gently mix the paneer with the gravy, being careful not to mash it.

Step 9: Final Simmer

Cover the pan and cook for another 5-6 minutes until the oil releases and the flavors meld together.

Step 10: Garnish and Serve

Garnish with fresh coriander leaves.

Serve the Amritsari Paneer Bhurji hot with bread, naan, paratha, or pav.
