MEAT SAUCE:
1360g (48oz) 93% ground beef
2 medium onions, finely diced
20g (4 tsp) olive oil
30g (2 Tbsp) tomato paste
16oz beef bone broth
2, 25oz jars marinara or crushed tomatoes
Add to taste: Salt, black pepper, garlic powder, Italian seasoning, red chili flakes
Optional: 30g (2 Tbsp) white miso
CHEESE FILLING:
900g cottage cheese
2 large eggs
227g (2 cups) shredded mozzarella
30g (½ cup) grated parmesan
2 Tbsp parsley
Salt, garlic powder
PASTA:
455g (16oz) lasagna noodles, boiled until just tender
TOPPING:
227g (2 cups) shredded mozzarella
40g (⅓ cup) Parmigiano Reggiano, grated

For this recipe, I used a foil 15x11x3 roasting pan that you can find in most grocery stores – “Handi-Foil Medium Rack Roaster Pan”. They also sell foil “lasagna pans” in the same section, but I opted for a larger pan to make more food at once.

LASAGNA ASSEMBLY:
4 meat sauce layers, 3 pasta layers, 2 cheese sauce layers, then shredded cheese topping. Layer lasagna as follows:
– Thin layer of meat sauce
– Noodles
– Cheese filling
– Meat sauce
– Noodles
– Cheese sauce
– Meat sauce
– Noodles
– Meat sauce
– Then, top with shredded mozzarella and Parmesan.
Cover with foil. Bake at 375°F for ~40 minutes. Remove foil and broil 10–15 minutes, or until cheese is bubbly and golden brown.
Let lasagna rest for 15–20 minutes before slicing into 10 pieces, and enjoy!
