Ingredients
– 2-4 Eggs (whole, unbroken yolks)
– 1 tbsp Butter (or Desi Ghee)
– ½ tsp Ghee (optional, to prevent butter from burning)
– 1 small Onion (chopped)
– 2–3 Garlic Cloves (chopped)
– ½ tsp Ginger (grated)
– Chaat Masala – ½ tsp
– Salt – to taste
– Fresh Coriander – for garnish
– Lemon Juice – few drops
Step-by-Step Recipe
1. Prepare the Pan
– Heat a cast-iron pan.
– Add butter and a little ghee to avoid burning. Let it melt completely.
2. Cook the Eggs
– Crack open the eggs directly onto the pan (without whisking).
– Let them cook slowly on medium heat.
– For half-fried poached eggs, cook until the yolk is soft.
– For hard poached eggs, flip gently and cook both sides until firm.
3. Add Flavours
– Add chopped garlic and onion while the egg cooks for a crunchy twist.
– Sprinkle salt, and cook till golden brown edges appear.
4. Final Touch & Serve
– Sprinkle chaat masala, coriander, and lemon juice.
