Crispy veggie fritters with NO deep frying and NO maida? My gram flour + rice flour hack makes them guilt-free AND restaurant-quality crunchy!
🥬 THE SECRET: Shallow frying with gram flour (besan) + rice flour creates the PERFECT crispy coating without heavy oil or all-purpose flour. These veggie fritters are:
✅ Healthier than deep-fried pakoras
✅ No maida/all-purpose flour
✅ Packed with vegetables
✅ Crispy outside, soft inside
✅ Perfect tea-time snack
🔥 WHY THIS WORKS:
Gram flour adds protein and nutty flavor, while rice flour creates that signature crunch. Shallow frying uses 90% less oil than deep frying, making these fritters guilt-free without sacrificing texture!
💡 PERFECT FOR: Healthy snacking, evening chai, lunch boxes, party appetizers, or when you’re craving pakoras but want something lighter.
Ingredients:
1 cup cabbage, finely shredded
½ cup capsicum, finely chopped
½ cup carrot, grated
½ cup onion, finely chopped
2 tbsp coriander leaves, chopped
1 green chilli, finely chopped (adjust to taste)
2 eggs
2 tbsp gram flour (besan)
2 tbsp rice flour
½ tsp black pepper powder
Salt to taste
Oil for brushing/frying
Instructions:
In a large mixing bowl, combine cabbage, capsicum, carrot, onion, coriander leaves, and green chilli.
Add the eggs, gram flour, rice flour, black pepper, and salt. Mix everything well to form a thick batter.
Heat a pan or tawa over medium flame and brush it lightly with oil.
Drop spoonfuls of the mixture onto the pan and flatten slightly.
Cook on both sides until crisp and golden brown, brushing a little oil as needed.
Serve hot with chutney or ketchup.
