Today, Alane made her favorite salad combination using leftover Beet BurgerFit burgers, salad greens, shredded carrots, feta cheese, and Koops’ mustard! She treated herself with a double chocolate muffin from Veggies Made Great. Stephanie shared a throwback to 1st-grade lunch by bringing carrots, celery, hummus, cheese slices, blueberries, orange slices, and power bites! She ate them all individually and added an egg-white and spinach frittata from Veggies Made Great for extra protein and nutrients!

ALANE’S GO-TO SALAD:
-A handful of spinach or greens of your choice
-Shred a carrot using a veggie peeler or grater. Add to the salad greens.
-Add 1 tbsp (or more) feta cheese
-Break up a beet BurgerFit burger over the salad
-Add Koops’ horseradish or honey mustard for a low-calorie dressing!
-Pair with a double chocolate muffin from Veggies Made Great

-Baby carrots

-1/2 cup hummus
