Ingredients
40gs Chicken breast meat
Garlic
1/2 teaspoon Reduced salt fish sauce
1 teaspoon Olive oil
1/2 teaspoon tsp Sugar
1/2 teaspoon toasted white seasme seed
Coriander leaves
Teochew black olive
Cooked Brown rice (left over-night for extra texture)
Egg

1. Process the teochew olive with two cloves of garlic to get an olive paste.

2. Beat and fry the egg till it is 70% cooked. Set aside the cooked egg.

3. Chop the chicken into smaller slices. Stir-fry the chicken with some garlic and olive oil, till it is 70% cooked. Set aside.

4. With a bit of olive oil, fry the olive paste till it is fragrant.

5. Add the cooked brown rice. Stir continually to ensure even coating of olive paste on the rice.

6. Add half a teaspoon of fish sauce and half a teaspoon of sugar to the wok, and continue to fry for 1 – 2 minutes.

7. Add the cooked egg and chicken back into the wok, and fry for 1 minute.

8. Serve with white sesame seed and coriander.
