Bakery Style Perfect Kurkura Puff Recipe…

INGREDIENTS
Dough:
– 2 Cup All Purpose Flour/Maida
– 1/4 Tsp Salt
– Water
– 1/4 Cup Butter
– 1/4 Cup Oil

Stuffing:
– 250 gm Chicken Keema
– 1 Tbsp Oil
– 1 Medium Onion
– 1 Tbsp Ginger Garlic Paste
– 1/4 Tsp Turmeric/Haldi
– 1 Tsp Chilli Powder
– 1/4 Tsp Roasted Cumin Powder
– 1/2 Tsp Garam Masala
– 1/4 Tsp Chaat Masala
– 2-3 Pinch Black Pepper
– 2-3 Tbsp Roasted Chana Dal Powder/Sattu Powder
– Salt
– 1 Tbsp Water

METHOD
– Take all purpose flour in a bowl and add salt. Add water and make a medium soft dough. Cover and rest for 20-25 minutes.
– ⁠Heat oil in a pan and sauce onion. Add ginger garlic paste and saute till the raw smell is gone.
– ⁠Now add chicken keema and all the spices. Mix well. Cover and cook till the chicken is done. Add roasted chana dal powder and a little water at the end. Mix well and cook for another minute. The stuffing is ready.
– ⁠Knead the dough for 15-20 seconds and divide into 8 equal sized portions.
– ⁠Mix soft butter and oil till well combined.
– ⁠Take one portion, apply flour and roll into a thick sheet. Roll all the dough ball into similar sheets.
– ⁠Apply some butter oil mixture to a plate and place one dough sheet. Appy butter and oil mixture generously and spread it. Keep the next dough sheet and repeat the steps.
– ⁠Cover the sheets and let them rest for 25-30 minutes.
– ⁠Take one sheet and place on a large clean counter. Stretch into a thin sheet as shown in the video. Fold into a rectangle and make cut on one side. Place stuffing and fold. For better understanding, please check the video.
– ⁠Place all the puffs on a baking tray lined with parchment paper. Sprinkle some black or white sesame on top.
– ⁠Preheat OTG at 200°C for 10 minutes and the bake the puffs for 35-40 minutes (Keep the tray in the middle rack).
– ⁠After the puffs are done, take out the tray.
– ⁠Serve hot and enjoy!
