Paneer Bowl with Leftover Rice Recipe:
Ingredients:
For Raita:
1 cup curd/yogurt
¼ cup cucumber (finely chopped)
¼ cup carrot (finely chopped or grated)
2 tablespoons fresh coriander leaves (chopped)
1 green chilli (finely chopped)
Salt to taste
For Fried Rice:
2 cups leftover rice
1 tablespoon butter
4-5 garlic cloves (finely chopped)
½ cup onion (chopped)
½ cup capsicum (chopped)
¼ cup carrot (chopped)
¼ cup sweet corn kernels
½ teaspoon dried oregano
½ teaspoon chilli flakes
½ teaspoon black pepper powder
Salt to taste
For Grilled Paneer:
200g paneer (cut into thick slices)
2 tablespoons curd/yogurt
½ teaspoon red chilli powder
½ teaspoon black pepper powder
Salt to taste
1 tablespoon butter (for grilling)
Instructions:
Step 1: Prepare the Raita
In a bowl, add curd, chopped cucumber, carrot, coriander leaves, and green chilli, salt to taste
Mix everything well
Keep aside in the refrigerator until serving
Step 2: Prepare Fried Rice
Heat a pan on high flame
Add a small amount of butter (about 1 tablespoon)
Add chopped garlic and sauté until aromatic (30 seconds)
Add onion, capsicum, carrot, and sweet corn
Sauté for 1 minute on high flame, stirring continuously
Add leftover rice and break any lumps
Add oregano, chilli flakes, black pepper, and salt
Mix everything well and toss for 1-2 minutes
Remove from heat and keep aside
Step 3: Marinate and Grill Paneer
In a bowl, take paneer slices
Add curd, red chilli powder, black pepper, and salt
Mix well and coat all paneer slices with the marinade
Let it marinate for 5-10 minutes (if possible)
Heat a grill pan on medium-high heat
Add a small amount of butter
Place marinated paneer slices on the pan
Grill each side for 3-4 minutes until golden brown with grill marks
Flip carefully and grill the other side
Remove from heat
Step 4: Assemble the Paneer Bowl
In a serving bowl, add a portion of fried rice as the base
Place grilled paneer slices on top
Serve raita on the side or add a dollop on top
Serve hot
Pro Tips:
Use day-old rice for best fried rice texture
Don’t over-sauté vegetables – keep them slightly crunchy
High flame cooking gives better flavour to the rice
Don’t over-marinate paneer or it will become too soft
Medium-high heat is perfect for grilling paneer – gives nice char without burning
You can add more vegetables to the rice based on preference
Make raita fresh for best taste and texture
