Creamy Crunch Chickpea Salad

Ingredients
• 2 cups cooked chickpeas, dried well
• 1 tsp oil
• 1 tsp red chilli powder or paprika
• ¼ tsp garlic powder• ¼ tsp cumin powder
• ½ tsp salt

Veg mix
• ½ cup cucumber, thinly sliced into rounds
• ½ cup cherry tomatoes
• 2 tbsp sliced red onion
• 1 tbsp chopped coriander or parsley

Creamy dressing
• ½ cup thick hung curd or Greek yogurt
• 1 tbsp lemon juice
• 1 tsp olive oil
• 2 garlic cloves, grated
• ½ tsp black pepper
• ½ tsp salt
• 1 tbsp finely chopped mint
• optional: ½ tsp honey

Optional topper
• 1–2 tbsp walnuts, lightly toasted and chopped
• extra roasted chickpeas
• mint leaves

Method
1. Toss chickpeas with olive oil, paprika/red chilli, garlic powder, cumin powder and salt. Roast in a pan over medium heat, stirring, until golden and crisp; or air fry at 380°F for 12–15 min. Cool slightly.
2. In a mason jar, add the roasted chickpeas, cucumber, tomatoes, onion, yogurt, lemon juice, olive oil, garlic, pepper, salt, mint, and honey if using. Seal and shake well to coat everything evenly.
3. Transfer to a serving bowl. Top with remaining roasted chickpeas, toasted walnuts, and fresh mint.
