Serves: 2-3 | Time: ~20 mins (excluding soaking) ⏱️
🟢 Preparation
Soak ¼ cup horse gram overnight.
Soak 20 cashews for 6 hours.
🟢 Ingredients
Horse gram:
¼ cup horse gram, soaked
¼ tsp rock salt
1 cup water
Dressing:
20 cashews, soaked
¾ tsp grated ginger
1 tsp lemon juice
1 green chili, chopped
¾ tsp rock salt
3 tbsp water
Veggies:
1½ cups chopped cherry tomatoes (or tomatoes)
1½ cups chopped cucumber
2 tbsp finely chopped parsley leaves (or dill)
Topping:
2 tbsp pomegranate seeds
2 tbsp roasted almonds, chopped
🟢 Method
1. Add soaked horse gram + salt + water to a steel pressure cooker.
2. Cook for 6 whistles on medium flame, then 2 whistles on low flame.
3. Let the steam release naturally and allow it to cool slightly.
4. Blend all dressing ingredients until smooth and creamy.
5. In a bowl, mix cooked horse gram + veggies + dressing.
6. Add toppings and serve fresh.
Tip: Let it rest for 5-10 minutes before eating… the flavours get even better.
