This high-protein tuna couscous salad is the perfect healthy lunch idea. Made with red kidney beans, tuna, fluffy couscous, fresh tomatoes, sweet corn, leafy greens and a simple lemon olive oil vinaigrette — it’s quick, nutritious and meal-prep friendly.

This salad was the result of a cupboard clean-up, but use your imagination and customize it as you please.

Ingredients:
– 1 can of red kidney beans
– 1 can of tuna
– About 1/4 cup of sweet corn
– About 1/4 couscous
– 1 tomato
– 1 generous hand of leafy greens
– Vinaigrette: equal parts of lemon juice and olive oil and salt to taste
