Try this Beetroot Salad with Feta Cheese! Perfect as side dish, pang-handaan, or kahit light dinner lang. Sweet, tangy, creamy — lahat nandito na!
Ingredients:
For the Dressing:
2 pcs lime (squeezed, juice only)
½ cup olive oil
1 tbsp honey or sugar
½ tsp salt
¼ tsp ground black pepper
(Blend using immersion blender until well combined and slightly creamy.)
For the Salad:
½ kg beetroot (boiled for 45 minutes, peeled & diced)
3 pcs medium cucumber (sliced or diced)
200g feta cheese (crumbled)
1 medium green bell pepper (diced)
425g sweet corn kernels (drained if canned)
Procedure:
Prepare the Beetroot:
Wash the beetroot thoroughly. Boil for about 45 minutes or until fork tender. Let it cool, peel off the skin, then dice into cubes.
Prepare the Vegetables:
Slice the cucumber, dice the green bell pepper, and drain the sweet corn.
Make the Dressing:
In a container, combine lime juice, olive oil, honey (or sugar), salt, and black pepper.
Blend using an immersion blender until well emulsified.
Assemble the Salad:
In a large mixing bowl, combine beetroot, cucumber, bell pepper, and sweet corn.
Pour the dressing and toss gently until evenly coated.
Add Feta Cheese:
Sprinkle crumbled feta cheese on top. Lightly toss or leave some on top for presentation.
Serve & Enjoy!
Best served chilled. Pwede i-ref muna for 30 minutes before serving for better flavor.
