Healthy Thai Noodle salad that’s vegan, gluten-free, and ready in under 30 minutes! This is one of my favorite simple plant-based meals when I want something fresh but filling. Perfect for meal prep, parties, or a quick weeknight dinner. Save the recipe below for your next healthy meal!
Thai Peanut Noodle Salad 🥜🍜🥗✨
Completely vegan & GF
Makes 10 servings
14oz to 1 lb of noodles of choice (I’m using @LotusFoods gf whide white rice ramen noodles)
1 (12oz) bag coleslaw mix
1 large red bell pepper, thinly sliced
1 (12oz) bag frozen shelled edamame, defrosted
1 bunch green onions, sliced
1 cup unsalted peanuts, chopped or blisted in the food processor
Dressing:
1 cup peanut butter powder (I’m using @PBFit)
2 Tbsp chili sauce or sriracha
1/2 Tbsp extra virgin olive oil
1/4 cup low sodium tamari or coconut aminos
1/2 cup rice vinegar
2 Tbsp lime juice
2 Tbsp maple syrup
4 cloves peeled fresh garlic
1/3 cup water
Cook noodles according to package instructions.
Add the cole slaw mix, bell pepper, edamame, green onions, and peanuts to a large bowl.
While the noodles cook, make the sauce: mix all dressing ingredients together in a blender or food processor and blend until smooth, about 30 seconds.
Rinse the noodles in cold water after straining to make sure they are cool and add them to your salad mix. Top with peanut sauce and toss to combine.
Add some extra green onions, and chopped peanuts to the top of the dish for some extra razzle dazzle. Enjoy!
