Kurkuri Bhindi
Time: 10 minutes
Temperature: 170°C
Ingredients
Bhindi (quartered) – 3 cups / 180 g
Salt – to taste
Kashmiri red chilli powder – 1 tsp
Turmeric powder – ¼ tsp
Coriander powder – ½ tsp
Chaat masala – ½ tsp
Besan – 3 tbsp
Process
Wash the bhindi and pat it completely dry. Cut each bhindi into quarters lengthwise.
In a bowl, add the bhindi along with salt, Kashmiri red chilli powder, turmeric, coriander powder, and chaat masala. Mix well.
Add the besan and toss everything together so the bhindi gets lightly coated.
Spread the bhindi evenly in the air fryer basket without overcrowding.
Air fry at 170°C for about 10 minutes, shaking or checking in between so it cooks evenly.
Once crisp and golden, remove and sprinkle a little extra chaat masala before serving.
Serve hot as a crunchy snack or side with dal and roti.
