Chef Vincent Gilliard taught a classroom of SnapDragon lovers how to create this tasty and healthy salad.
INGREDIENTS:
4 Cups fresh Spring Greens
1-2 SnapDragon Apples,
sliced thick or chopped
1 Cup Snow Peas
1 Small Zucchini, sliced on the bias
1⁄2 Red Onion, thinly sliced
1⁄2 Cup fresh Bean Sprouts
2 Tbsp Cilantro leaves
Asian Ginger Dressing
DRESSING INGREDIENTS:
1⁄4 cup Peanut or Canola Oil
2 Tbsp Rice Wine Vinegar
2 Tbsp Coconut Sauce
2 tsp Freshly grated Ginger
2 tsp Low Sodium, Soy Sauce
1 1⁄2 tsp Sesame Oil
1 tsp Agave Syrup
1 tsp Minced Garlic
DIRECTIONS:
Combine spring greens, snow peas, zucchini slices, red onion, and
cilantro leaves in a bowl. Assemble bean sprouts and then apple slices/
chunks on top. In separate bowl, combine dressing ingredients until well
blended. Drizzle dressing over top of salad and enjoy!
