My favorite healthier banana bread recipe that’s great for a pre-run or pre-workout snack!
Traditional banana bread can be higher in fat, especially for the big slice I want to eat before a run. Eating too much fat before working out doesn’t sit well, which is why I made this banana bread using Greek yogurt instead of butter. It keeps the bread moist with less fat and adds a little extra protein. I still used a bit of olive oil for richness.
This healthier banana bread version makes a great pre-run and pre-workout snack because it’s mainly carbs to keep you energized!
Ingredients:
🔹3 very ripe bananas (~1 1/2 cups)
🔹3/4 cup Greek yogurt, nonfat or low fat
🔹2 eggs
🔹1/4 cup maple syrup or honey
🔹2 Tbsp olive or avocado oil
🔹1 tsp vanilla extract
🔹1 3/4 cups flour
🔹1 tsp baking soda
🔹1/2 tsp baking powder
🔹1/2 tsp salt
🔹1 tsp cinnamon
Preheat oven to 350F. Grease or line 9×13 inch loaf pan.
In a large mixing bowl, mash bananas. Then, add Greek yogurt, eggs, maple syrup, oil, and vanilla. Whisk until well combined.
Add flour, baking soda, baking powder, salt, and cinnamon to mixture. Stir to combine.
Pour mixture into loaf pan. Bake for 45-55 minutes, or until an inserted toothpick comes out mostly clean. Let cool before slicing.
You can also add in chocolate chips or nuts. I keep it simple since I like eating it before a run.
