🥬🍑 Chicken & Grilled Peach Summer Salad with Green Goddess Dressing

🍗 Ingredients:

• 400g chicken mini fillets
• 1 tin peaches in juice (drained)
• 1 red onion (thinly sliced)
• 1/2 bag mixed leaf salad
• 1/2 bag baby spinach leaves
• 2 wholemeal pitta breads
• Optional: handful of pine nuts

🥣 Green Goddess Dressing:

Blend together:

• 1 small garlic clove
• 1/2 avocado OR 2 tbsp zero-fat Greek yoghurt
• Juice of 1 lemon
• Handful fresh basil
• Handful fresh parsley
• Handful fresh chives
• 1 tbsp olive oil
• 3 tbsp water (adjust for desired consistency)
• Black pepper to taste

Blend until smooth and creamy.

1️⃣ Grill or pan-cook the chicken until golden and fully cooked through.
2️⃣ Lightly grill the drained peaches for extra caramelized flavor.
3️⃣ In a large bowl, combine mixed leaves, spinach, and red onion.
4️⃣ Slice the chicken and peaches, then layer over the salad.
5️⃣ Drizzle generously with the Green Goddess dressing.
