Ingredients
3 eggs
80 g honey (or 120 g blended dates)
1 tsp vanilla extract
100 ml milk
50 g yogurt or Greek yogurt
40 g melted butter or coconut oil
3 medium carrots, grated
180 g spelt flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
pinch of salt
optional: walnuts, almonds, or raisins
Instructions
Preheat oven to 180°C / 350°F.
In a large bowl, whisk together eggs, honey, vanilla, milk, yogurt, and melted butter.
Stir in the grated carrots.
Add flour, baking powder, baking soda, cinnamon, and salt.
Gently mix until just combined (do not overmix).
Put bake paper
Bake for 35–45 minutes, or until a toothpick comes out clean.
Let cool before slicing.
